Chocolate WALNUT Ever Disappoint

If you are anything like me, you have a special sweet spot for anything and everything chocolate. It doesn't matter what the question is, chocolate is always the answer. Happy? Eat chocolate. Sad? Eat chocolate. Stressed? Eat chocolate. Any emotion ever? Eat chocolate.


In my opinion, there is nothing like a RICH, DECADENT, FUDGEY chocolate cookie. However, I am a big texture gal as well. I love having some crunch in my sweets. So what goes better with chocolate? WALNUTS! Specifically, Diamond of CA Sweet Maple Walnuts. They just launched their NEW ready-to-eat Snack Walnuts. What I love about these walnuts is that they are super satisfying snacks that are nutritious, delicious, and AFFORDABLE. The available flavors of the snacks include Himalayan Pink Salt, Salted Dark Chocolate, Hickory Smoked Bacon, Chile Lime, Cinnamon Churro, Hot Honey, Teriyaki & Wasabi, and Sweet Maple (unique to flavor at Walmart).

The Sweet Maple Walnuts were calling my name and I just had to create a recipe that showcased their sweet goodness. I knew they would compliment chocolate SO well and then the WALNUT BROWNIE COOKIE was born. These cookies were extremely easy to make, they are gluten-free, dairy-free, and refined sugar-free!

I am so excited to share the recipe for these DELISH cookies!

RECIPE:

~ 1 egg

~ 1/2 cup almond butter (or any nut/seed butter)

~ 1 tsp vanilla extract

~ 3 tbsp maple syrup (or honey)

~ 3 tbsp melted coconut oil

~ 1/3 cup raw cocoa powder

~ 2 tbsp almond flour

~ dash of sea salt

~ 1/3 cup chocolate of choice

~1/3 cup chopped Diamond of CA Sweet Maple Walnuts

INSTRUCTIONS:

  1. Preheat over to 350 degrees F

  2. In a bowl, mix together the egg, nut butter, vanilla, maple syrup, and coconut oil until fully combined

  3. Add cocoa powder (slowly because it WILL get messy), almond flour, and sea salt

  4. Fold in chocolate and walnuts

  5. Use a cookie scoop to place dough onto parchment paper-covered baking sheet

  6. Top with more chocolate and walnuts

  7. Bake for 8 minutes and let cool for at least 5 minutes
